Ingredients
- 2 cups uncooked old fashioned rolled oats (not quick oats)
- 2 cups buttermilk
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 2 whole eggs
- 4 tablespoons (1/2 stick) melted butter
- 1/8 teaspoon salt
Instructions
- In a large microwave safe bowl combine oats and buttermilk. Microwave for 3 minutes or until just warm.
- Combine the remaining dry ingredients in a seperate bowl.
- Mix the melted butter and eggs into the oatmeal mixture.
- Fold in the dry ingredients until combined. Note: batter will be thick.
- Lightly grease skillet on medium-low heat. If you have an infrared thermometer (which every kitchen should have) the skillet should be around 350 degrees.
- Drop ladles of batter onto skillet. Cook until edged are dry and bubbles in the center have popped. Flip, cook for another two minutes or so (depending on the heat of your skillet -- adjust time and heat accordingly).
